Pandan Waffles

Experimented a little with a recipe I found on one of the blogs. This recipe is similar to the Prima Deli waffles in Singapore bakeries. It's light, soft and fluffy. Not the crunchy type.

All you need is some basic ingredients, and a waffles machine!
Ingredients / Method: 
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/4 cups granulated sugar


Step 1.  Combine the above DRY ingredients in a bowl

4 eggs YOLKS
200ml coconut milk
4tbsp butter, melted
240 ml water
1/4 tsp pandan paste (or 1 tsp of 
pandan paste if you like the smell and taste of it)

Step 2.  Combine the above WET ingredients in a separate bowl

Step 3.  Combine wet and dry ingredients

4 eggs WHITES

Step 4.  Beat egg Whites until foamy

Step 5. Fold in egg whites into batter.

Step 6. Pour into waffles machine.

And here we have our own pandan waffles.

We love having this with peanut butter or kaya (coconut jam).
